I’m always experimenting with new breakfast and snack recipes to avoid getting bored of the same old options. I’m not going to lie, the first time I made these muffins, I accidentally put in 1 TBSP of baking soda instead of 1 TSP. Needless to say, that batch went right in the trash.
I tried again later in the day (because I don’t ever give up on a good muffin recipe) and this time they came out great! I spread some Medford Farms Apple Butter on top and drizzled with a pinch of peanut butter (microwave peanut butter for about 30 seconds for a more liquid form).
Ingredients:
- 1 cup almond flour
- 1 banana (mashed)
- 1 egg
- 1 TBSP Agave
- 1 tsp baking soda
Preheat the oven to 350°F and spray muffin tins with cooking spray. Combine dry and wet ingredients in separate bowls. Mix both sets of ingredients together. Spoon batter into muffin tins. Bake for about 20 minutes. Allow to cool for 10 minutes and spread with apple butter and peanut butter drizzle. Eat and enjoy!
